Ingredients
- 0.25 cup COCONUT OIL
- 1 cup DESICCATED COCONUT
- 1 cup CURRANTS
- 0.5 cup FLAX SEEDS
- 0.25 cup HONEY
- 3 JUICE OF LEMON
- 1 PEEL OF LEMON
- 1 cup NUTS
- 3 cups ROLLED OATS
Steps
- 1) Preheat oven to 150C.
- 2) In a pan, combine coconut oil, honey, lemon peel and lemon juice.
- 3) Bring to boil.
- 4) Take off the heat when the honey is dissolved.
- 5) Let cool a little.
- 6) In another bowl, combine oats, flax seeds and chopped nuts.
- 7) Mix well.
- 8) Pour the honey mixture over the dry ingredients and stir until the oat mixture is well coated.
- 9) Spread the granola evenly on a baking pan, and bake for 20 minutes.
- 10) Turn over the granola, and stir in the coconut flakes.
- 11) Bake for another 10 minutes.
- 12) Let cool and stir in the currants.
- 13) Keep in airtight container.
