Lemon Coconut Granola

Ingredients

  • 0.25 cup COCONUT OIL
  • 1 cup DESICCATED COCONUT
  • 1 cup CURRANTS
  • 0.5 cup FLAX SEEDS
  • 0.25 cup HONEY
  • 3 JUICE OF LEMON
  • 1 PEEL OF LEMON
  • 1 cup NUTS
  • 3 cups ROLLED OATS

Steps

  • 1) Preheat oven to 150C.
  • 2) In a pan, combine coconut oil, honey, lemon peel and lemon juice.
  • 3) Bring to boil.
  • 4) Take off the heat when the honey is dissolved.
  • 5) Let cool a little.
  • 6) In another bowl, combine oats, flax seeds and chopped nuts.
  • 7) Mix well.
  • 8) Pour the honey mixture over the dry ingredients and stir until the oat mixture is well coated.
  • 9) Spread the granola evenly on a baking pan, and bake for 20 minutes.
  • 10) Turn over the granola, and stir in the coconut flakes.
  • 11) Bake for another 10 minutes.
  • 12) Let cool and stir in the currants.
  • 13) Keep in airtight container.
